As the weather becomes warm, I want crisper, more cooling meals. Here is my take on a Cobb salad. A recipe for a salad? Yes! Because ingredient ratios matter, I found the perfect ratios for this one! :), Anne

2 cups Romaine lettuce, chopped

1 large avocado cubed into small squares

2 hard-boiled eggs chopped into small pieces

1 TBLS sunflower seeds

1 TBLS crumbled blue cheese

Blue cheese dressing to desired taste

Romaine lettuce contains Vitamins A and C, two powerful antioxidants that help maintain many essential body functions.

Avocados are full of good fats, fiber, and potassium with a savory buttery consistency.

Sunflower seeds are the fruit of the sunflower and offer vitamin E, manganese, and a delicious nutty crunch.

Eggs are an excellent source of protein, vitamin B12, and heart-healthy omega-3 fatty acids. Pasture-raised eggs have a better nutrient profile than conventionally raised eggs.

With protein, fiber, and fat, this salad works great as a meal. Enjoy!
